The Famous Retreat Cookies

Here’s the recipe you’ve all been waiting for!!! Gluten free Chocolate cookies that are quite simply the best thing you’ll ever eat! And they’re Gluten Free too!!!!

Ingredients:
250g butter, softened (or non-dairy alternative)
160gm brown sugar
1tsp vanilla essence
1tsp cinnamon
1 egg
140 gms GF plain flour
100gms almond meal
30gm Cocoa
2tsp GF baking powder
3 cups GF cornflakes

Icing:
100gms milk chocolate
100gms dark chocolate
1/2 cup pistachios, toasted and chopped roughly (you can use any nuts, I sometimes use my homemade GF Granola, anything with some good crunch will work)

Method:
Using your food processor with the chopping blade, beat butter, sugar, vanilla & cinnamon until pale. Add egg and pulse to combine.
Add flour, almond meal, cocoa and baking powder, mix until combined.
Add cornflakes and pulse a few times – not too much, you don’t want them completely broken down.
Tip mix on to a piece of baking paper and shape into a log – you may need to dampen your hands as the mix will be sticky.
Freeze the log for at least one hour – preferably overnight.

After freezing time:
Preheat oven to 160 (fan forced)
From the log, slice rounds about 6mm thick and place on a baking sheet lined with baking paper, leave about a little more than an inch between each biscuit to allow for spreading.
Bake approx 12 minutes, until only just firm. Cool on trays.
Make the icing by melting the chocolates together and spreading a teaspoon of melted chocolate on each cookie, sprinkle with toasted pistachios.
Serve (but keep a couple in the kitchen for yourself because they’ll all be gone before you get one!)
